Coffee Cake
Ingredients for 9 servings
Directions
1/2 cup of canola or vegetable oil
1 egg, room temperature
1/2 teaspoon of vanilla extract
1/2 cup of milk, room temperature
1/2 cup of cane sugar
1 1/2 cups of flour
1 1/2 teaspoons of baking powder
Pinch of salt
3/4 cup of packed brown sugar
1 tablespoon of cinnamon
3 tablespoons of butter, melted
1. Preheat your oven to 350°F. Grease a 8x8 pan.
2. Whisk together the oil, egg, vanilla extract and milk in a large bowl.
3. In a medium bowl, combine the sugar, flour, baking powder and salt. Stir with a fork.
4. Combine the brown sugar and cinnamon in a small bowl.
5. In your pan, put half of the batter on the bottom and smooth it out. Sprinkle on half of the cinnamon sugar.
6. Add the other half of the batter on top of the cinnamon sugar and smooth it out. Then add the rest of the cinnamon sugar and smooth it out.
7. Drizzle the melted butter over the top. Feel free to smooth it out as well if you want!
8. Bake for 15-20, then let cool and enjoy!
